园艺简单地说是指关于花卉、蔬菜、果树之类作物的栽培方法。确切来说是指有关蔬菜、果树、花卉、食用菌、观赏树木等的栽培和繁育的技术，一般比较精细。相应地分为果树园艺、蔬菜园艺和观赏园艺。
从字面上来看，园艺一词是“园”加“艺”的集合，“园”字在这里的意思是指种植蔬菜、花木的地方，“艺”字则是指技能、技术。“艺”字作为动词时，本义是“种植”的意思。园艺一词，原指在围篱保护的园囿内进行的植物栽培。现代园艺虽早已打破了这种局限，但仍是比其他作物种植更为集约的栽培经营方式。

园艺业是农业种植业生产中的一个重要组成部分，对丰富人类营养和美化、改善人类生存环境有重要意义。在园艺学上，园艺通常是指与园地栽培有关的集约种植的农作物及其栽培、繁育、加工利用技术，为农业及种植业的重要组成部分。
